What Is Your Jamaican Recipe of The Month?
- JAMAICAN SORREL RUM PUNCH – INGREDIENTS;-
• 2 ounces (about 1 1/2 cups) dried sorrel calyxes (also called Jamaica or hibiscus)
• Two 1-inch cubes of peeled fresh ginger, chopped fine
• 3 whole cloves
• 5 3/4 cups water
• 3/4 cup sugar
• 1 1/2 cups amber rum
• 2 cups ice cubes, or to taste
• Lime and orange slices for garnish
- RECIPE:
Heat the sorrel, the ginger and the cloves. In a pan add 5 cups of water, bring to boil, pour it over the sorrel mixture, and let the mixture combine overnight. In a small pan bring the remaining 3/4 cup water and the sugar to a boil, stirring until the sugar is dissolved, and let the syrup cool. Strain the sorrel liquid into a pitcher, discarding the solids, stir in the sugar syrup, the rum and the ice cubes, and garnish the punch with the lime and orange slices.
- JAMAICAN RUM PUNCH – INGREDIENTS;-
• 2/3 cups of over proof Jamaican white Rum
• Optional - 2/3 cups coconut rum
• 1 (12 ounce) of concentrated fruit punch
• 36 ounces of water
• Optional - 4 cups Pineapple Juice
• 1/2 cup of Lime Juice
• 1/2 cup cherry syrup
- RECIPE:
• Mix everything together, taste and adjust.
• Optional garnish with pieces of pineapple or slices of lime.
• For great results serve over crushed ice.

The low heat allows the meat to cook slowly, so it loses little of its natural juices while becoming saturated with the flavour of the wood. You will love it! - ACKEE & SALT FISH - Jamaica's national dish featuring Ackee the mild Jamaican National fruit teamed with dried salted cod fish. The tasty combination is cooked up in a savoury sauce of tomatoes, onions, peppers and spices. - CALLALOO AND SALTFISH Jamaican greens and dried salted cod is cooked up in a savory sauce of tomatoes, onions, peppers and spices. - STEAMED/CALLALOO Callaloo is Jamaican greens like spinach, which has a slightly firmer texture. The greens are sautéed with peppers and onions then simmered in a mixture of aromatic herbs and spices. - JAMAICAN BROWN STEW CHICKEN Also known as Fricasseed Chicken the most popular way of cooking chicken in Jamaica. Chicken is marinated with a wild combination of herbs and spices then fried to a golden brown. Peppers vegetables and spices are then added and cooked to create the rich gravy (stew). - JAMAICAN CURRY CHICKEN
Chicken marinated in spicy Jamaican curry along with a host of other herbs spices and vegetables slowly cooked. This dish is typically served with steamed white rice. - Typical food for a party a popular island dish dating back to 1845 when -- following the abolition of slavery -- plantation owners began importing labourers from India and later China; the new arrivals quickly added their own contributions, including curry and other spices, to the island's expanding palette of exotic flavours. - To prepare curry goat, cut meat into small cubes and marinate in spicy Jamaican curry, thyme and other herbs and spices. Cook until the meat just fall off the bones. - MACKERAL – RUN DOWN Whole salted mackerel simmered in coconut milk, tomatoes, onions, scallions, thyme and hot peppers, and served with boiled green bananas or yams
